Lauren Blekkenhorst, the lead study author, explains that eating a diet rich in cruciferous vegetables may protect against vascular disease. Crucierous vegetables are part of the Brassica genus, which includes vegetables such as arugala, cabbage, cauliflower, broccoli, Brussel sprouts, kale, turnips, radish, watercress, collard greens, and others.
There vegetables are very nutrient dense and contain an abundance of vitamins and minerals. They contain sources of fiber; vitamins C, E, and K; folate, and other minerals.
The study followed 954 women living in Australia who were aged 70 or older. They asked the women detailed questions about their food intake. They took exams of the women’s carotid artery walls and plaque buildup.
Some of the questions included the frequency of vegetable consumption, which was answered on a 10 point scale that ranged from never to three times or more a day, which vegetables they ate, and the color of the vegetables.
The women underwent sonogram exams three years later to measure the thickness of their carotid artery walls and assessed the seriousness of plaque buildup.
The results showed that the women who consumed the most vegetables had, on average, carotid artery walls that were 0.05 millimeters thinner than women who consumed the fewest vegetables.
She and her team also found that for every 10 extra grams of cruciferous vegetables consumed per day, there was a 0.8 percent reduction in average thickness of carotid artery wall. No such link was found for other types of vegetable.
