Instructions:
- Prepare the Eggs:
- In a large bowl, separate the egg yolks from the egg whites. Set the egg whites aside for later.
- In the same bowl with the yolks, add 1/4 cup of sugar and whisk until the mixture is smooth and pale yellow.
- Heat the Milk and Cream:
- In a saucepan, combine the milk, heavy cream, nutmeg, and cinnamon (if using). Heat over medium heat until the mixture is warm, but not boiling.
